Jewel of Languedoc, in the south of France, the City of Carcassonne is classified as a World Heritage Site by UNESCO.

The vineyard, at the foot of this medieval fortress, is located between the Pyrenean mountains to the south and the Montagne Noire to the north.

It benefits from a Mediterranean climate tempered by the altitude and the oceanic influences of the Atlantic.

The grapes are harvested before dawn, when the temperatures are the coolest, and transported quickly to the chai. The pressing is done under protection of neutral gas and only the highest quality juices are selected. Cold settling allows clarification of the must. Alcoholic fermentation takes place takes place at a regulated temperature between 16 and 18°C. After the start of fermentation, half of the cuvée is put into new French oak barrels. At the end of fermentation, the wine is drawn off while retaining some fine lees and stirring regular will help to bring roundness. Before putting in bottle, the bases vinified in vats and those in barrels are assembled and the wine is clarified by a light fining.

Bright and clear golden yellow color. On the nose, floral notes (white flowers), spicy and delicately toasted. On the palate, a beautiful maturity and acidity sustained give this wine a very structure balanced. The finish, mineral and persistent, reveals the oceanic character of this wine.
