Description of the wine
Gérard Bertrand reveals the history of the great terroirs of the South of France. The first written trace of the Abbey of Saint Hilaire was found in 825. Located near Limoux, it is famous for having sheltered the monks who discovered the secret of the effervescence of
wines.
Vinification and aging
The grapes are picked by hand and harvested early, in order to maintain good acidity. As soon as it arrives at the winery, the fruit is immediately pressed using a pneumatic press.
The must is transferred into the vats for fermentation.

still. The wine is then transferred into sealed bottles for the second fermentation, according to the traditional method. Finally, the bottles are disgorged and the traditional dosage is very precise, in order to preserve all the freshness and balance of the wine.
Tasting note
This vintage composed of Chardonnay, completed with Chenin and supported by an addition of Pinot Noir, has a pale gold color. They release delicate aromas and
complexes of white flowers (jasmine, lily), yellow lemon peel, white pepper. On the palate, this crémant blossoms from the attack on frank notes of yellow peach in syrup, and grilled almond. The lively attack quickly gives way to the breadth of toasted and brioche notes

Gérard Bertrand a fait de son nom l'une des marques les plus dynamiques du vignoble français. S'il revendique faire des vins du Sud comme un "art de vivre", il est d'abord un vigneron méticuleux et exigeant, en recherche d'excellence pour ses 17 domaines. cette quête trouve son aboutissement avec le Clos d'Ora, magnifique cru sur les hauteurs de la Livinière et avec un rosé du terroir de Cabrières, la cuvée Clos du Temple, qui brille par son intense personnalité. Il mène depuis 2002 une large conversion de son vignoble en culture biologique et biodynamique, soit l'un des plus imposants de France en matière de viticulture vertueuse. Tous les vins des domaines sont remarquables.

Standard delivery is free in France for orders over €125 and in other countries for orders over €300.
