IGP Pays D'Oc
This Cote des Roses vintage celebrates the Mediterranean Art of Living. The soil, very varied, is mainly made up of hard limestone from the scrubland, schist soils but also gravel brought by the rivers and streams of Languedoc. The climate, hot and windy ("semi-arid Mediterranean climate with mild winter variation") favors the maturation of the grapes and their good health, while maintaining freshness thanks to the altitude and the effect of the sea, which mitigates the high summer temperatures. Its bottle is unique with a rose-shaped base, created by a young designer from the Boulle School. It is a wine that is offered like a bouquet of Roses!
The grapes are harvested at perfect maturity, in order to express the optimum potential of the grape variety. A meticulous sorting of the harvest is carried out at the time of picking and upon receipt of the grapes. The grapes are worked under neutral gas in order to minimize the risks of oxidation of the musts. The grapes are destemmed, cooled to 8°C and sent to the press in order to extract the must. Particular attention is paid to the pressing in order to keep only the first juices of the highest quality. The juices are then clarified more or less according to the desired aromatic profile. Fermentation lasts between 15 and more than 30 days depending on the degree of clarification and the temperature applied. Part of the wine is vinified then aged in 225-liter Bordeaux barrels for around 4 months, while the rest is vinified in thermo-regulated stainless steel vats at low temperature, in order to preserve the freshness and integrity of the aromas. The particularity of this grape variety lies in the nobility of its aromas and the delicacy of its wines. Finally, after a light fining, bottling takes place quite early in order to preserve the fresh and fruity character of the wines.
