As universal as it is ecumenical, the Clos du Temple is a celebration of life, rituals and traditions.

It is the link between the earthly and the heavenly and sets the rhythm of the seasons and the work of men. The temple is also the representation of Man in the Trinity. It is a symbol that encourages us to achieve excellence and awakens senses!

Located in the heart of Languedoc in the South of France, Clos du Temple is born on the historic terroir of Cabrières, the cradle of rosé wines. The terroir owes its singularity to its geological genesis. The contact between the schist, the limestone, and the hilly relief is at the origin of a complex underground water circulation network, promoting an exceptional natural water supply to the vineyard, and the emergence of a source of water of great purity.

Its combined altitude of 240 meters
to its South - South-West exposure, contribute to the development of a perfectly balanced wine, with great aromatic freshness. At Clos du Temple, we have decided to cultivate the vine in Biodynamics and to use the horse and the mule in order to promote the connection between the mineral, the vegetable, the animal and the human.

AOP Languedoc Cabrières

The manual harvest in crates is done at daybreak in order to benefit from the night-time thermal lowering. Each plot is harvested at the optimum date and vinified separately. The winery being located in the heart of the vineyard, the transport time is minimal. The best free-run juices are then selected. Before fermentation at low temperature.

A 24-hour settling is carried out at a controlled temperature between 8 and 10°C, without the addition of sulphur. The aging is done in new barrels selected with precision according to the origin of the wood, for 6 months on fine lees with stirring. The wines are assembled on fruit days.
