
Castellum Sauvignon Blanc 2023 75cl
In the Middle Ages, Castellum referred to the central castle Castrum, a fortified village located on the heights in Languedoc. The name of this vintage evokes the fortifications of the City of Carcassonne, classified as a World Heritage Site by UNESCO.

We are fortunate to have on a clay-limestone plateau of the Domaine de l'Estagnère a plot of mature Sauvignon (15 years) planted at perfect density (5000 vines/ha) and with quality trellises allowing a beautiful leaf surface, the driving force of photosynthesis and grape maturation. The oceanic influence allows for a cooler climate and preservation of the Sauvignon aromas sensitive to high heat. We saw with Gérard Bertrand the opportunity and potential to create this exceptional vintage. The technical choices, in particular avoiding leaf stripping to keep the grape protected from the sun, as well as the choice of biodynamic applications, allow this great Sauvignon a full expression of both the grape variety, the terroir, and an exceptional minerality and freshness. First vintage for this 100% Sauvignon Blanc cuvée, part of which (2/3) is aged for 8 months in oak barrels, will compete with its international counterparts.

A great Sauvignon blanc that expresses itself through an intense aromatic on notes of exotic fruits and flint and by a fine acidity worthy of the greatest Sauvignons. 2022 is a vintage already noted as one of the greatest of the last 50 years with ideal weather and perfect balance.
