Biodynamic viticulture is an extension of Organic Agriculture. However, the specifications for biodynamic wines are more restrictive than those for organic wines . To qualify for this biodynamic certification, the wine estate must be certified "AB". And it must also meet requirements such as spraying medicinal plant preparations in homeopathic doses to combat pests and promote the proper development of the vines.
Thus, within the Gérard Bertrand estates certified by the DEMETER label, whether the vines are intended for the production of red , rosé , white , and even orange wines , we provide these preparations according to the cycle of the lunar and astral calendar. This practice, in addition to preserving biodiversity, reinforces the intensity of the organic life of the vine stocks, promoting higher quality grapes. So, the typicality of biodynamic white wines is unique, offering very aromatic white wines of great finesse.
Beware, to those who claim to find only 2 or 3 aromas in a glass of white wine , because there are hundreds. And these aromas are all the more complex when the white wines are produced using biodynamic viticultural techniques . Indeed, the aromas come from the grape varieties and the type of soil in which the vine is planted. Added to this are the geographical location, the climatic conditions of the vintage, the winemaking methods and of course the conservation of the wine. But then why are biodynamic white wines aromatic?
Once the richness of the soils has returned thanks to the cultivation of the vineyard in biodynamics , the vegetative cycle of the vine becomes better defined, offering a more accomplished quality grape . In addition, in terms of winemaking , biodynamics prohibits the majority of oenological inputs that organic farming still tolerates. And also, the authorized sulfite levels are even lower than those set in the AB specifications. This results in authentic white grape juices and musts carrying the purest aromatic expression . Thus, the revelation of these aromas occurs during the fermentation process naturally thanks to the enzymes produced by the yeasts. And each yeast carries its own aromatic and organoleptic signature helping a better release of the aromatic precursors.
Each grape variety has its own aromatic characteristics and depending on the terroir, the aromas are expressed differently. Let's take the case of Sauvignon Blanc , it is composed of 3 varietal aromas which are pyrazines, thiols and terpenes.
● Pyrazines are plant aromas that are characterized by a herbaceous side.
● Thiols are highly sought-after sulfur molecules that are revealed during fermentation, with aromas of citrus, exotic fruits and boxwood.
● Terpenes include more than 4,000 compounds that provide aromas reminiscent of roses.
Before fermentation, the presence of these varietal aromas is still odorless. It is only through alcoholic fermentation that white wines are enriched with these aromatic notes. This is why biodynamic white wines are white wines overflowing with aromas with the authentic expression of their terroir and their grape variety. The key is to follow the fermentation process very closely. In order to obtain the most harmonious aromatic expression as is the case for the blended white wine from Domaine de Cigalus . It is composed of Chardonnay for the buttery side then Viognier and Sauvignon-Blanc for the herbaceous side giving it intensity and complexity .
