Vinification et élevage
The harvest is manual and the grapes are transported in crates to the cellar. The berries are destemmed and sorted from way to eliminate all the plant parts of the bunch. performs a cold pre-fermentation maceration for 5 to 8 days with regular punching down. At the start of alcoholic fermentation, We carry out punching downs, then, little by little, in order to better control the extraction of aromas and tannins, they are replaced by pumping over. In the end, the maceration lasts about 3 weeks. A delicate pressing in a pneumatic press with separation of juice run and press juices are made. The juice run is kept cold for 24 hours before filling. malolactic fermentation and 9 months of aging take place in barrels of oak. Finally, the wines from the different barrels are assembled after racking. There is no filtration before bottling.
Note de dégustation
Ruby red color with light copper highlights. Dominated nose by aromas of small grain fruits (raspberry, very intense redcurrant) to which are mixed some toasted notes. Soft, fruity and finely flavored mouth spicy. Fine and silky tannins, exceptional structure. Long and fruity finish.
