Vinification et élevage
The winemaking is precise and very precise given that we do not use any sulfites or oenological inputs during winemaking or bottling. reception, the grapes are immediately cooled to 8°C and pressed by taking care to remove the press juices. The juices are cold clarified in order to promote a natural clarification of musts and elimination of oxidizable compounds by precipitation. Alcoholic fermentation is rapidly initiated at temperatures of fermentation regulated between 17 and 18°C. At the end of fermentation, the wine is drawn off in such a way as to keep some fine lees which will be the antioxidant base of the wines during their aging before bottling. The latter occurs quite early throughout the year to preserve the unique aromatic expression of this wine and in preserve all the qualities and naturalness over time.
Note de dégustation
The dress is luminous with golden highlights. On the nose, we discover delicate notes of citrus and of white flowers. Round and harmonious, this Chardonnay offers delicious aromas of vanilla and gingerbread with a very nice balance.
