Vinification et élevage
The harvest of this ancestral and iconic grape variety from the South of France is carried out at the end of the night, when temperatures are coolest; This is to prevent any oxidation and to preserve the quality of these aromatic precursors. The harvests are generally carried out from the beginning to end of September after a thorough plot selection which allows the evaluation of the qualitative potential of each vine island. The grapes are transported quickly to the press. Only the highest quality first juices are selected. After clarification, fermentation takes place naturally and at controlled temperature between 16°C and 18°C. The wine thus obtained is aged in vat for a few months with stirring of the fine lees to obtain a natural smoothness and a creamy side in the mouth. The dress is clear, shiny with a color pale yellow and green highlights on youth.
